Cachoeirinha #4
Minas Gerais, Brazil
Variety: Red Catuai
Processing: Natural
Origin: Minas Gerais, Brazil
Producers: Cleber Thiago
Altitude: 1350M
Cachoeirinha is a farm that sits within the Mantiqueira Mountains in Minas Gerais. It's farmed by Cleber Thiago who is a young farmer. I had the pleasure of visiting with him and his family on the farm on my last trip to Brazil. We are delighted to be roasting one of his coffees and I'm excited to be sharing it with the club. The farm is relatively high for Brazil at 1350m and this lot is 100% Red Catuai. This coffee is a natural processed coffee but it is a very clean processing so it almost tastes washed (apologies to all you lovers of the funk).
This coffee is perfect for our classic line up. Tasting of Red raspberry fruit candy with milk chocolate and hazelnut with a touch of anis, it's a delicious coffee that I'm delighted to be sharing with you.

This is definitely more of a classic coffee than a mustache-style coffee, but it is still fantastic. The raspberry notes are present, but somewhat mild - what predominates is the creamy, milk chocolate texture and flavor with a nice touch of hazelnut. A smooth, delicious drink. I only rated it 4 stars as it's difficult to compare to the more layered, subtle coffees I normally get, but this is as good as classic gets!
