This coffee was produced by the Cooperativa Cafetalera Sanmarqueña - known locally as Cocasam for short. The cooperative has 160 active members (61 women and 99 men) that farm primarily in the La Botija mountain range. La Botija is one of the largest nature preserves in southern Honduras with dense forests providing ample shade for the coffee plants and keeping temperatures down. Since the surrounding forest is protected, farmers in Cocasam cannot expand the size of their farms so they focus on improving crop yields via organic production practices and increasing cup quality via rigorous processing to command higher prices for their beans. These efforts and the natural benefits of the forest preserve result in truly exceptional coffees - which Cocasam has been producing since 1988.
San Marcos de Colón is the perfect selection for our Classic Series thanks to its smooth profile and bold taste. We're getting a serious chocolatey flavor out of these beans, and a touch of citrus to boot. The body on this cup is prominent and creamy as well, making for an extra-smooth brew that's worth savoring. A lot of care and consideration went into producing these beans, and we're excited for you to give them a taste!

We enjoyed this coffee, it definitely tasted like the description, chocolate, cream, and fruit notes were definitely detected! The color is very light, but the flavor is full! Drinking this saves us on the amount of cream we usually use and the sweetener as well, because it has so much flavor.

I really like how smooth and rich this cup of coffee that has sweet notes of chocolate and caramel. It does have a touch of bright acidity to give it some interest too. I’m really impressed with my first shipment!

Although I am a beginner coffee drinker, this coffee, at least for me, requires no cream - It tastes as if the creamer is already built into the coffee! The chocolate taste is distinct, but there, overpowered by a creamy yet bold taste. Just add sugar and i’m ready to go.

This is an interesting Classic. The tasting notes of chocolate, cream and citrus are spot on. This is a smooth coffee with little bitterness. Nice for morning drinking. After a rich, complex nose, the actual taste was a bit of a letdown. That said, this coffee is a solid classic roast. What it lacks in complexity it makes up for in drinkability. A good everyday coffee.

I'm not identifying the notes from the blurb above, but am finding my own perception very pleasant. These beans have a strong aroma when ground, and that intensity thankfully makes it to the cup. Up front there's not a ton of body (though this might be due to paper-filtered Aeropress, I still need to try other brew methods), and after the smoothness there's a spike of what I can only identify as tart blackberries. There are also very classic coffee notes in there. Delicious!
