Estrella Divina is a neat communal producer project from La Coipa, Peru organized by Origin Coffee Lab. The project brings together small-holder farmers in the same region, providing training resources and financing for their farms in addition to organizing a communal lot composed of the top-performing coffees. The farms are generally small, family-owned operations with 1-2 hectares in production. They process their own coffee on-site in micro-beneficios and dry either on patios or in parabolic driers. Most of the farmers organize communal harvesting days, helping their neighbors with picking and processing ripe cherries in return for the same help on their own farms. It’s a very cool concept that’s generating some great coffees - and we’re glad our friends at Nordic Approach helped bring this coffee to the states!
Since this lot comes from multiple farmers in the La Coipa region, it’s a good cross- section of the flavors and varietals that are most common there. We’re tasting a rich, caramel sweetness that permeates the entire cup - it’s a smooth sipping coffee for sure. There’s a bit of brightness and a touch of berry tones, perhaps due to a few of the contributing farmers trying some different fermentations during processing. It’s a unique lot of specialty coffee that highlights the communal aspect of the beans - we hope you’ll keep the spirit alive by sharing a brew with a fellow coffee lover!

Holy s#$! this is good coffee! Definitely picking up on the pervasive and lingering caramel sweetness. There's a hint of bright acidity and some really interesting berry notes coming through to add complexity. Lovers of the classic roast series will likely especially love Estrella Divina. Bold yet smooth flavors with no bitterness. Rewards those who attend to the flavors without demanding your attention. Loving this coffee.

This was the first and certainly not the last selection I will be trying from your establishment. I am not as descriptive with my words as some seem to be in other comments, but i will try. I found the taste pleasing and smooth. If I had a choice the "acidity" was a bit much for me, but there was no bitterness or bite afterward which I expected though was very pleased did not come.

Divina is divine! Coffee lovers who enjoy the subtle taste of light roasts will really delight in these beans. The bright, almost juicy berry top and smooth caramel base create a delicious cup, no matter how you brew it. If you're tired of burnt bean bitterness, give this light roast a try. It's like discovering light grade maple syrup after years of tasting the darker stuff. Best of all, Moustache subscribers can expect something different to try every two weeks: no coffee boredom here!

I'm absolutely blown away with how delicious this coffee is. I'm not really someone you'd call a coffee "connoisseur", since my palate is really more experienced with higher proof brown drinks... but you can really get a nose and taste of blackberry from this one. I don't pick up too much of the caramel, but this is a very bold and smooth brew.

I enjoyed the taste and I was able to find the fruity notes in it. A little too smooth for my taste, but that depends more on personal preference. Recommended for those who like to have a very soft coffee with noticeable fruity flavors in it.

Love this coffee and the Moustache Coffee Club. Im new here and the beans are freshly roasted and delieveried. I also got the Aeropress and I've been experimenting and I love the inverted method. If you haven't tried this check out the "how to brew" section on the Moustache Website. There are also tons of YouTube videos with great recipes.

Estrella Divina is a solid coffee. No bitterness in the coffee whatsoever, and I really like the berry / caramel notes. Although, the flavors are not as bold as some other Moustache coffees I've had. Overall, another great selection by Moustache!

This is my second coffee from MCC and I can say I really enjoy it. I am a dark roast/espresso bean lover, but the subtle notes of cherry/berry aroma blend well with the medium roast. The acidity note is there, but more of a bright flavor. This coffee was great but I prefer something deeper/darker for an everyday blend

The Estrella Divina was a solid experience for me. At first I thought I did something wrong in my aeropress, because it looked a very light translucent color, but when I tasted it, it tasted rich and and properly made. Normally I use a dark roast, so that might explain it. I used a fine/very fine grind for mine, paired with an aero press. 14g of coffee with 140g of water at 190 F. Tried some minor temp/coffee variations with no significant differences. A solid experience.

This is an interesting one. The first thing I picked up was actually a mineral note. At a coarser grind, that came through as a not unpleasant saltiness, but when I dialed the grind in it became much more balanced. I didn't pick up specific fruit notes, but there is definitely a fruity acidity. The rest of the flavor profile is classic, smooth, and dark. Estrella Divina is a great middle ground between second-wave-style beans and single origins, with enough weirdness to keep it engaging.
