This Catuai coffee was grown high in the mountains of Santa Maria de Dota, at Martin Guiterrez' Gamboa farm. Costa Rica is known for its honey coffees, and this is an expertly prepared example. The cherries are floated to remove any imperfect examples before being mechanically pulped to remove some of the mucilage. The beans are then rotated every hour and a half over 15 days of raised-bed drying to attain the perfect moisture content.
All that attention to detail unleashes wild flavors in every cup of Gamboa. Luscious fruit notes like red apple and juicy blackberry mix well with a sticky caramel sweetness. This cup also exhibits a surprising nutty flavor on the back end of the profile, which we don't usually see in honey coffees. If you're looking for a coffee that will make a strong impression, you don't want to miss this one!

I didn't get as much of the fruit-forward flavors out of this one as I was expecting on initial brew, but I definitely caught the nutty, caramel notes. Been having a touch of trouble with my grinder of late, so perhaps I was a little too fine-ground for the aeropress, but I still think it was a solid cup!

Brewed in a chemex, 40g of coffee, 680g water, one minute off boil. Flavor was rich, fruity but not very acidic, nutty was present but not too strong.

Second honey processed coffee I have tried from Moustache. Wonderful. I am now spoiled. Unlike most national branded and darker roasts, these drinks get better as i drink it. Cooling it just a bit from fresh off the pot continues to open up the flavors. The aroma of the beans the,selves are simply intoxicating in their complexity and sweetness.

Loved the lightness of this coffee. It was a very interesting cup, it sometimes almost tasted watery but then all of a sudden the note of apple would pop out. One of my favorite coffees I’ve had.
