This is our second coffee from Juan Saldarriaga's La Claudina farm this year. In contrast to lot #3 this is an Anaerobic Natural. That just means that it is fermented in the absence of oxygen. This is usually achieved by fermenting the coffee in closed vessels rather than in an open tank. The reason we like to do it is that it can bring out some very interesting and complex flavors in the coffee. You'll find that the flavors are more concentrated and punchy rather than the mellow sweetness you might get from a washed coffee or the more jammy flavors from a standard natural.
This coffee is for those who like a very interesting cup. It's got heavy chocolate cake as it's main flavor note, with a ton of raspberry lychee fruit to balance things out. It's sweet throughout with a nice medium body. It's a party in your mouth!
