"Ermita" derives from the Latin word "eremita" meaning "people who live alone" which is an apt description for the farmers who have grown this beautiful coffee for us. Hailing from remote areas of San Lorenzo, La Unión and Grove municipalities in the Nariño department the 28 farmers who contributed to this lot are well used to being alone.
This mostly caturra lot is picked by hand and then processed using the traditional washing process for Narino. First 60-70 hours in fermentation tanks and then once washed it is dried on patios in the sun.
This processing helps develop the clean and fruity flavors that are so desired in this coffee without adding any "processing" flavor. I'm enjoying sipping on this lot and I hope you do too!
