La Independencia is a project with 6th generation El Salvadorian coffee producer, Jose Antonio Salaverria, and his two sons Andres and Jose Antonio. The family has three main areas of coffee production around the Santa Ana volcano in the northwestern region of El Salvador. The brothers took over operations from their father some years ago, each focusing on different aspects of coffee production. Jose Antonio manages the fields and the agronomical part, and Andres is managing the different processes at the mill. La Independencia coffees taste like great classic Salvadors: sweet, with dark fruity flavors; red berries, soft and rich with good mouthfeel and intensity.
We are tasting a well-structured brew with rich, sweet stone fruit, playful floral notes, and bright lemon-like acidity. Each sip lingers on the palette providing a juicy finish. Yum!.
