This extra-special lot of coffee was grown on Faver Ninco's Finca Costa Rica, a 10-hectare farm in the hills of Huila, Colombia. Seeing the farm name on the bag made us do a double-take - we thought we'd received a coffee from the wrong country! Thankfully, the beans we have are some of Faver Ninco's best: Pink Bourbons from Huila are some of the sweetest, juiciest coffees around, and everyone at Finca Costa Rica puts a lot of effort into their Pink Bourbon program. Unlike some producers that farm a variety of crops - Faver and his wife Andrea focus solely on specialty coffee, cultivating over 10,000 Caturra trees and 3,000 Pink Bourbon trees. Faver manages the planting, pruning, and harvest of cherry while Andrea oversees the washing and drying of the coffees, turning the parchment at strict intervals to make sure every bean dries evenly.
The outcome is undeniably exceptional coffee. Finca Costa Rica floored us when we cupped it: a juicy peach note with a great amount of tartness, filled out by a smooth, sweet caramel note that finishes elegantly with some florals. Pink Bourbons are always great - but this Pink Bourbon is especially great, and that makes it a must-have for our Tasting Series. The notes above are accurate. This is indeed exceptional coffee. I have certainly never tasted any coffee quite like it. The tasting notes are spot on as well. The caramel infuses the brew lending it a creamy, tender mouthfeel and a touch of sweetness. The floral notes and peach are also evident. They are all well-balanced and delicate. That said, and this is probably just a matter of personal taste, it’s a bit too delicate and subtle for me. I also think the sweetness is a bit much, it kind of gives me a cotton candyish feeling in my mouth. It’s a fascinating coffee, and I’m glad Mustache gave me a chance to try it, but it’s not one I’d have again.

Fantastic coffee - intriguing and complex yet highly drinkable. Lots of sweetness. I'm picking up on not only caramel notes, but something like hot chocolate as well. A nice subtle tartness brightens things up, while a soft floral note keeps things interesting. Yet, this coffee has a roasty backbone too, keeping it grounded. This is a middle-mouth coffee, not too high, not too low, with a creamy, mellow texture. If you don't like this coffee, I'll take your leftover beans!
